Roasted Onion Hummus

Ingredients
- 1 Onion, cut into small chunks
- 1 can Chickpeas, drained (reserve liquid when draining)
- 1/2 Lemon, juiced
- Olive or Rapeseed oil, 3tbsp + a drizzle for Onions
- 1tsp Garlic oil
- 2tbsp Tahini
- 4tbsp Chickpea water from can
- Salt and Pepper
Method
- Preheat the oven to 180c
- Place the onion onto a roasting tray and drizzle with a little oil
- Roast the onion in the oven for around 30 mins, until soft and slightly dark at the edges
- Place the roasted onion with all the other ingredients into a blender and blitz
- Add a little more chickpea water if required to achieve your desired texture
- Serve and enjoy
Top tip: Roast the onion when you are cooking something else and the oven is already on, to save energy and so it is ready to use whenever you have a hummus urge!
