Chicken Mince Air Fryer Nachos
This quick and tasty ‘fake-away’ is perfect for a Friday night treat. Made with lean chicken mince, homemade tortilla chips, and loaded with flavour, these air fryer nachos are a healthier twist on the classic dish. Easy to make and customisable with your favourite toppings!
Ingredients
Serves: 4
- 2tsp olive or rapeseed oil
- 1 onion, finely diced
- 1 clove garlic, finely chopped or grated
- 2 Green peppers, chopped into 2cm dice
- 500g Chicken Mince
- 1 tbsp tomato puree
- 1-2 green chilli’s finely chopped
- 1 tsp dried oregano
- 2 tsp paprika
- 1 tbsp ground cumin
- 2 tbsp ground coriander
- 1 400g tin tomatoes
- 1 tin black beans, drained
- 120g cheddar cheese, grated
For the Tortillas
- 6 wraps
To serve (optional)
- Guacamole/ avocado
- Natural yoghurt
- Picked chilli’s
Method
- Heat the oil in the pan and gently sweat off the onions for 5-8 mins until soft and golden
- Add the garlic, green chilli’s and green peppers and cook for a further 5 mins to soften the peppers
- Add the chicken mince and fry until lightly coloured
- Add the tomato puree, oregano, paprika, cumin and coriander and cook for a further 1 minute
- Add the tomatoes and beans and stir into the other ingredients. Half fill the bean tin with water and add this to the pan
- Simmer everything gently for 15minutes
- Whilst the sauce is cooking you can make the tortilla chips. Cut each tortilla wrap into 8 triangles
- Preheat the air fryer to 200°C
- Put the tortilla triangles into your air fryer until it is full (about a quarter, depending on the size of your air fryer)
- Air fry for 3-4 minutes, checking and turning regularly, until they are slightly crisp
- Repeat until all the triangles have been cooked
- Once the sauce is cooked, remove the plates from your air fryer and place some nacho chips in the bottom of the pan, add some sauce and then sprinkle a little cheese. Add another layer of nachos, more sauce and then the rest of the cheese (I save more cheese for the top than the middle!) (I find it easiest to do 2 portions of nachos at a time due to the capacity of my air fryer pan).
- Cook the nachos in the air fryer on 200°C until the cheese has melted (3-5mins)
🍽️ Kate’s Top Tip: If you don’t have an air fryer then layer the nachos in baking trays in the same way and pop under the grill under the cheese has melted. You can make the nacho chips by placing the tortilla triangles on a tray in an oven at 200°C for around 5 minutes, turning halfway.
