Sticky Salmon Air Fryer Skewers with Stir-Fry Veg 

Quick, flavour-packed and full of goodness – these Sticky Salmon Air Fryer Skewers with Stir-Fry Veg are the ultimate weeknight winner. With omega-3-rich salmon and vibrant veg, this recipe delivers on taste, nutrition and speed – all thanks to the trusty air fryer. I really enjoyed this one and so did the kids!

For the skewers: 

  • 800g Salmon, skin removed and cut into 3–4cm chunks 
  • 1 tbsp runny honey 
  • 2 tbsp reduced salt soy sauce or tamari 
  • 2 tsp sesame oil 
  • 1 tbsp freshly grated ginger  
  • 1 garlic clove, finely chopped or grated 
  • Juice of 1 lime 
  • 4 metal skewers  (or wooden skewers soaked in water)

For the stir-fry veg: 

  • 1 pack stir-fry vegetables (300g) (ones with tenderstem broccoli and mange tout work well for this) 
  • 1 tsp olive or rapeseed oil 
  • 1 tsp sesame oil 
  • 2 tbsp Hoisin sauce 
  • 1 tsp chilli bean sauce (or use ½ to 1 tsp of chilli flakes) 
  • 2 tsp dark soy sauce 

To serve: 

  • Serve with rice or noodles 
  • Fresh coriander, sesame seeds (optional) 
  1. Marinate the salmon:
    In a bowl, mix the honey, soy sauce, sesame oil, ginger, garlic, and lime juice. Add salmon chunks and coat well. Marinate for 10 minutes.
  2. Assemble skewers:
    Thread the salmon pieces onto the skewers, dividing them equally between the four metal skewers. Reserve any remaining marinade.
  3. Cook in the air fryer:
    Preheat air fryer to 180°C. Place salmon skewers in the basket and cook for 8–10 minutes, turning halfway. Brush with leftover marinade during cooking for extra glaze. Once cooked remove from the air fryer and keep warm
  4. Cook the veg:
    Mix all the sauce ingredients together in a bowl. Remove the plates from your air fryer and add the stir fry veg. Mix the sauce into the vegetables. Cook in the air fryer on 180°C for about 5 mins, or until tender. If there are softer vegetables like pak choi leaves, leave them to wilt through at the end.
  5. Serve:
    Plate up with rice or noodles (you could mix the noodles through the veg to cover in sauce). Remove the salmon from the skewers and place on top of the noodles and veg. Scatter with coriander or sesame seeds if desired!
  6. N.B. If you don’t have an air fryer then simply marinade the salmon and skewer. Place on an oven tray lined with foil and then cook in an oven at 200°C for 8-10mins.
  7. For the veg- heat the oil in a wok, add the ginger and garlic and stir fry for a minute, add the veg and stir fry for 2-4mins until tender, then add the sauce to warm through.


🍽️ Kate’s Top Tip: Swap the salmon for firm tofu or halloumi for a delicious veggie option!
Cut into chunky cubes and marinate exactly the same way as the salmon. Tofu works brilliantly as it soaks up all the sticky flavours, while halloumi gives a lovely golden edge in the air fryer. Cook the same way—8–10 minutes at 180°C, turning halfway. Perfect with the stir-fry veg and noodles.
